Video Recipe | Raisin & Walnut bread

Each autumn, the walnut tree in our garden provides me with hundreds of delicious, fresh nuts. One of my favourite ways of using these is using them in bread. Once baked, the bread is a perfect base for some of the amazing local soft cheeses that are produced in the Morzine area.

Ingredients

500g wholemeal flour

500g plain flour

1.5 tsp fast acting yeast

25g sea salt

700ml water

120g of walnuts

120g of raisins

Method

Bring flours, yeast, salt & water together into a rough dough

Knead for 1 min

Rest for 15 mins

Knead for 1 min

Rest for 15 mins

Add the walnuts & raisins

Knead again until the walnuts & raisins are evenly spread

Leave to rise for 90 mins

Cut into 2 & shape into 2 simple round loaves

Leave to rise for 45 mins

Bake at 230C for 35 mins

Leave to cool and then serve with soft cheese!
