How to Make Butter From Scratch

Butter is a familiar face in the weekly household shop, but it’s actually really easy to make at home, and it’s unbelievably versatile. Rich and creamy, you can absolutely taste the difference, and it requires a mere 2 ingredients!

I love to add flavours to my home-made butter: my absolute favourite is a foraged twist on classic garlic butter using wild garlic. Try also blitzing in fresh herbs and sun-dried tomatoes; or simply top with a generous sprinkling of smoked sea salt. Your possibilities are endless, but with butter this good, all you really need is a knife and a decent loaf.

Homemade Butter Recipe

Ingredients

–      Whipping cream (minimum of 30% fat)

–      Sea salt to taste

 

Equipment

–      Stand mixer or an electric hand mixer

–      Sieve

 

Method

Whisk the cream on a medium to high speed until it reaches firm peaks.
Reduce the speed to medium and continue whisking. You’ll start to see the solids separate from the buttermilk.
Continue whisking until the solids clump together.
Strain – keep the buttermilk – then rinse the butter in very cold water until the water is no longer cloudy.
Knead in sea salt to taste.
Immediately scoff the lot on toast.
Home-made butter doesn’t last as long as shop-bought so eat it within 2 weeks.
