This delicious summer salad is a great way to enjoy courgettes while they are in season. In just four simple steps it is easy to make and creates colourful addition to any BBQ. We serve it with Cote du Boeuf in our Gourmet Grill series, but it also makes a great vegetarian dish. Enjoy!
Drizzle of olive oil
2 handfuls of feta
1 red chilli
1 handful of mint
1 handful of toasted pine nuts
Slice the courgettes lengthways
Grill until lightly charred on both sides
Arrange criss-crossed on a large plate
Dress with olive oil, lemon, salt & pepper. Sprinkle on the feta cheese, red chilli, mint and a handful of toasted pine nuts
